Slow Cooker 3-Ingredient Foil Packet BBQ Pork Chops

Step 1: Prepare the Slow Cooker

Lightly spray the inside of a large slow cooker with nonstick cooking spray. Tear off four large sheets of heavy-duty aluminum foil, each large enough to fully wrap a pork chop and its toppings.

Step 2: Assemble the Foil Packets

Place a pork chop in the center of each sheet of foil. Divide the sliced onions evenly among the chops, piling them on top.

Spoon about ⅓ cup barbecue sauce over each pork chop, making sure the onions are coated as well.

Step 3: Seal the Packets

Bring the long sides of the foil together and fold them tightly to seal. Fold in the ends to create secure packets that will hold in the juices while cooking.

Step 4: Arrange in the Slow Cooker

Place the foil packets in the slow cooker, stacking slightly if necessary. Cover with the lid.

Step 5: Slow Cook

Cook on LOW for 5–6 hours or HIGH for 2½–3 hours, until the pork chops are tender and reach an internal temperature of 145°F (63°C).

Avoid lifting the lid during cooking, as this releases heat and extends cooking time.

Step 6: Finish and Serve

Carefully remove the foil packets from the slow cooker. Open each packet cautiously, as hot steam will escape.

Transfer the pork chops to plates or serve directly in the foil trays. Spoon the flavorful cooking juices and softened onions over the top.

For extra barbecue flavor, brush with a little additional sauce just before serving.

  • Boneless pork chops may be substituted, but check for doneness earlier since they cook more quickly.
