Ingredients

For the Graham Cracker Crust
2 cups graham cracker crumbs
1/3 cup granulated sugar
1/2 cup unsalted butter, melted
1/2 teaspoon cinnamon (optional)
For the Brown Butter
1 cup unsalted butter
For the Cheesecake Filling
4 packages (8 oz each) cream cheese, softened
1 1/4 cups granulated sugar
4 large eggs
1 cup sour cream
1/2 cup heavy cream
Browned butter (prepared above)
Seeds from 2 vanilla beans
2 teaspoons pure vanilla extract
1 tablespoon cornstarch
1/4 teaspoon salt
Optional Vanilla Bean Whipped Cream
1 cup heavy whipping cream
2 tablespoons powdered sugar
Seeds from 1 vanilla bean
Garnish

Instructions
Step 1:
Preheat oven to 325°F (163°C).

Grease a 9-inch springform pan and wrap the outside with heavy-duty foil to prepare for a water bath.

Step 2:
Prepare the crust.

Combine graham cracker crumbs, sugar, cinnamon, and melted butter.

Mix until evenly moistened.

Press firmly into the bottom of the springform pan.

Bake for 10 minutes.

Allow to cool while preparing the filling.

Step 3:
Make the brown butter.

Place butter in a saucepan over medium heat.

Allow it to melt completely.

Continue cooking, stirring frequently, until golden brown specks appear and the butter develops a nutty aroma.

Remove immediately from heat.

Cool for 15 minutes.

Step 4:
In a large mixing bowl, beat softened cream cheese until smooth and creamy.

Scrape down the sides of the bowl frequently.

Step 5:
Gradually add sugar and continue beating until silky smooth.

Mix in cornstarch and salt.

Step 6:
Add eggs one at a time.

Mix on low speed after each addition.

Avoid overbeating to prevent excess air bubbles.
